З 1961 р. у ХПІ видається збірник наукових праць "Вісник Харківського політехнічного інституту".
Згідно до наказу ректора № 158-1 від 07.05.2001 року "Про упорядкування видання вісника НТУ "ХПІ", збірник був перейменований у Вісник Національного Технічного Університету "ХПІ".
Вісник Національного технічного університету "Харківський політехнічний інститут" включено до переліку спеціалізованих видань ВАК України і виходить по серіях, що відображають наукові напрямки діяльності вчених університету та потенційних здобувачів вчених ступенів та звань.
Зараз налічується 30 діючих тематичних редколегій. Вісник друкує статті як співробітників НТУ "ХПІ", так і статті авторів інших наукових закладів України та зарубіжжя, які представлені у даному розділі.

H.The basis of the state policy of Ukraine in the field of healthy nutrition of the population for the period until 2025 is to preserve and strengthen the health of the population, prevention of diseases caused by poor and unbalanced nutrition. Food products enriched with irreplaceable components, including dietary fibers, have been developed. The article substantiates the use of broiler meat as the main ingredient of the recipe, selects and studies the vegetable supplement of oat bran, which contains dietary fibers. The functional-technological and organoleptic indicators of minced meat models with different amounts of vegetable additives were studied, as a result, the optimal dose of introduction was determined and the formulation of the product made from broiler meat with an increased content of dietary fibers was developed. Optimal modes of heat treatment of the semi-finished product using a steam convection oven and modes of cold treatment of the finished product in "shock" freezing chambers were selected. The thermophysical characteristics of the new product were studied, and the duration of its freezing was calculated using Planck's formula. The technology of production of a functional product from broiler meat is proposed. The developed product is characterized by high organoleptic characteristics, such as juiciness of the product, pleasant smell and taste, uniform consistency, as well as a large yield of the finished product. The product contains dietary fibers, in one portion their amount is 8 g, which contributes to the satisfaction of 40% of the body's daily need for this food substance. The optimal recipe and technology of chicken cutlets with dietary fibers have been scientifically substantiated and developed. The possibility of producing chicken cutlets with a high content of dietary fiber has been theoretically and experimentally substantiated. Based on the analysis of the chemical composition and the study of the content of dietary fibers, functional-technological and organoleptic indicators of six vegetable supplements, the feasibility of introducing the vegetable supplement "Oat bran" into the recipe of chicken cutlets was substantiated. The effectiveness of thermal processing of chicken cutlets with increased dietary fiber content when using a convection oven in the steam + convection mode compared to the traditional method of processing has been proven. The raw materials for the production of the finished product were selected, the recipe was developed, the heat treatment parameters were selected, and the technology of quick-frozen finished product was developed. The developed ready-made poultry dish has an increased nutritional value due to the content of dietary fibers. It is taken into account that dietary fibers should be a mandatory part of the diet. Their total content in one portion is 8 g per 125 g of the finished product, which meets the daily need for this indicator by 40%.Документ Prospects of cultivated mushrooms use in technology of sausages(Національний технічний університет "Харківський політехнічний інститут", 2019) Stepanova, Tetiana; Kondratjuk, Natalia; Haijuan, Nan; Suprunenko, KaterinaIn order to solve the problems associated with expanding range of sausage meat component of high biological value, a search was conducted for alternative, natural and affordable sources of protein. Protein deficiency in human nutrition has led to the search for ways to increase biological value. It was proposed the optimal ratio of components of sausage meat, consisting of meat and mushroom raw materials. The purpose of this combination is to achieve the composition of sausages to the desired approximation of the "ideal protein" with the established technological effects for this production. The main objective of this work is to study the food and taste qualities of the finished product to expand the range of functional sausages at meat processing enterprises in Ukraine and China. Analysis of these data shows that an increase in the level of meat substitution with mushroom raw materials leads to a redistribution of the mass fractions of moisture, protein, fat and ash. The redistribution of these same indicators is affected by the physical state of the introduced mushroom raw material: powder or finely crushed mass. It was recorded a decrease in the mass fraction of fat by approximately 3% and 6%, respectively. Therefore, it was noted a decrease in energy value from 362 kcal to 335-304 kcal. The proportion of carbohydrates in the experimental samples has increased by an average of 1-2%. The mass fraction of protein remained almost unchanged, but the composition of the protein was closer to the "ideal protein". According to the results of organoleptic evaluation, it was found that when developing recipes for cooked smoked sausages, it is advisable to add boiled mushrooms in an amount of 15 - 20% in finely crushed form. It is advisable to add in the amount of 3.0 - 7.0% at the mixing stage in the form of a dry powder of fried mushrooms. The data presented in this article make it possible to assess the prospects of t he food industry in the production of sausages enriched with semi-finished products of varying degrees of readiness based on cultivated mushrooms. The results of the analytical study reflect the unique degree of the cultivated mushrooms amino acid composition approximation to the "ideal protein". Particular attention was paid to essential (limiting) amino acids and their content in new types of sausages.Документ Study of organoleptic and technological properties of fish maffins with addition of pearly powder(НТУ "ХПІ", 2019) Kondratiuk, Natalia Vyacheslavivna; Stepanova, Tetiana Mykhailivna; Viyenko, Oleksiy Yuriyovich; Shen, YunjianThe authors propose a new type of snack muffins with the addition of dry minced fish from sea and freshwater fish, enriched with pearl powder. It provides high protein content and good taste of finished products. The article presents the results of experimental studies on the enrichment of dry minced fish with pearl powder and the addition of these compositions to the recipes of snack muffins. Tasting analysis showed that the best organoleptic indicators have samples of flour culinary products with the content of enriched dry minced fish in 25%. However, such a quantity of recipe ingredients introduced negatively affects the process of dough formation and the appearance of finished products. The amount of added pearl powder was 2.3% of the amount of dry minced fish. The increase in the amount of added pearl powder to 5% does not contribute to an increase in the hydrophilic-city of dry minced fish in the composition of the dough piece for snack muffins. A further increase above 5% adversely affects the organoleptic characteristics of the finished culinary products. Thus, the accepted amount of dry minced fish was 15%. Adding 2.3% of pearl powder to the amount of dry minced fish allowed the physiological required ratio of calcium and phosphorus, which was 2:1 and provide preventive doses of organically bound calcium and phosphorus by 24-28% depending on age.Документ Prospects of amaranth using in the brine systems based on uronate polysaccharides(НТУ "ХПИ", 2018) Kondratiuk, Natalia Vyacheslavivna; Stepanova, Tetiana MykhailivnaThe article is devoted to the problem of improving the nutritional value of meat snack products by improving the composition of marinades with amaranth oil and mixtures for injection such as amaranth protein hydrolyzate. The authors considered the reasons for the creation of improved meat snack products with increased nutritional and biological value. The prospect of using amaranth in the composition of brine systems (mixtures for injection, massaging and soaking) for the production of meat snack products has been substantiated. The chemical composition of analogue brine systems and systems with the inclusion of amaranth is given. Use in the composition of brine for the injection of well-digestible proteins of vegetable origin is based on the fact that, together with the total increase in the moisture content of salty model fermented meat systems they allow to regulate the mass fraction of protein in the composition of finished products. Adding to the brine composition of animal protein in the amount from 0,5 to 1% allows to get meat systems with stable structural and mechanical characteristics.
