Abstract
The results of investigations of low temperatures influence on apricot chemical composition are
represented in article. Fruit of apricot have a high nutrition characteristic so problem of long term keeping
is very important. Mathematical model of prediction of substances content during term of keeping was
created. Showed that initial concentration of substances and term of keeping have an influence on
composition.
