The materials are presented defined correlation between the amount of antioxidants produced from walnut leaves and calendula flowers and technological parameters of an extract. Fixed the dependence of the induction period of triggered sunflower oil oxidation process on the content and value of plant antioxidants. Detected the synergy effect of an antioxidant produced from walnut leaves and calendula flowers and sunflower oil tocopherols. Discovered, that the degree of unsaturation of fatty acids are comprised in plant oils, does not affect the antioxidant activity of plant antioxidant complex. Defined that injecting of complex plant antioxidant together with monoacylglycerols into oil creates the sedimentationresistant dispersed phase.
