A feature of the work is determining the approximation dependence of the induction period of accelerated oxidation of refined rapeseed oil on the content of primary oxidation products and free fatty acids. This is useful when predicting the shelf life of refined rapeseed oil. It was determined that both factors negatively affect the oxidation stability of refined rapeseed oil. An increase in the peroxide value decreases the induction period of model oil samples by 32.8512 units for each additional mmol ½ O/kg. In turn, increasing the acid value of oil samples reduces the induction period by 19.8424 units for each additional mg KOH/g. Different oxidation dynamics of model samples of refined rapeseed oil with tocopherol were revealed, depending on the concentration of primary oxidation and hydrolysis products. The obtained data are explained by the fact that the primary lipid oxidation products are unstable and quickly decompose to form free radicals. These radicals initiate further lipid oxidation, resulting in reduced oil quality. In addition, free fatty acids are more reactive than triglycerides and are more easily oxidized. A feature of the obtained results is the possibility of modeling processes that affect the oxidation stability of refined rapeseed oil. From a practical point of view, the research results allow initiating measures to maintain the safety of oil-containing food products based on refined rapeseed oil. The way to solve the problem of developing compositions of oxidation-stable emulsion systems based on nutritionally valuable oils, in particular hemp oil, by adding natural physiologically active antioxidants is considered. The research is relevant in the context of finding effective storage methods and extending the shelf life of products using hemp oil. The feature of the work lies in determining the influence of the composition of emulsion systems based on hemp oil on chemical oxidation during storage. The content of stabilizers in the hemp oil emulsion system (lecithin – 0.8...1.0 %; xanthan gum – 0.0...0.1 %) is proposed, which is effective in the inhibition of oxidative spoilage. The content range of β-carotene (0.012 %) in model emulsion systems is outlined, the addition of which increases the induction period of accelerated lipid oxidation by 1.58...2.08 times. The peroxide value of the lipid component of the emulsion system during storage at different temperature conditions (0...15 °C) and during different storage periods (15...60 days) was studied. The results of the study confirm the significant influence of the composition of emulsion systems on the chemical oxidation of the lipid component, which is important for ensuring the quality and stability of food, pharmaceutical and cosmetic products. The effect of the content of fat-soluble dyes on the period of induction of accelerated oxidation of their solutions in refined sunflower oil was studied. The peculiarity of the work consists in establishing approximate graphic and mathematical dependences of the term of the induction period of accelerated oxidation of refined sunflower oil on the content of chlorophyll and beta-carotene separately and together. This is important for predicting the shelf life of oil solutions of fat-soluble dyes. It was determined that chlorophyll A practically does not show a pro-oxidant effect if its content is up to 0.05 g/l. The content of chlorophyll A at the level of 0.10 g/l leads to a reduction in the duration of the induction period by 14 %; 0.20 g/l – by 36 %; 0.30 g/l – by 48 %. The content of beta-carotene at the level of 0.10 g/l leads to an increase in the duration of the induction period by 35 %; 0.20 g/l – by 47 %; 0.30 g/l – by 54 %. The content in the oil system of 0.10 g/l of beta-carotene and 0.05 g/l of chlorophyll A leads to a reduction in the period of induction of accelerated oxidation by 8.4 % compared to the oil solution of 0.10 g/l of beta-carotene without chlorophyll A. The obtained data are explained by the fact that there is a compensatory effect of the antioxidant beta-carotene on the pro-oxidant effect of chlorophyll A in the oil solution. A feature of the obtained results is the possibility of predicting the shelf life of oil solutions of fat-soluble dyes. From a practical point of view, the results of the research allow to develop oil systems taking into account the separate and compatible features of reactivity to the oxidation of chlorophyll and beta-carotene. The object of research was flaxseed. An urgent technological problem is the intensification of the bioactivation process of flaxseed and its effective disinfection. The expediency of using plasma-chemically activated aqueous solutions as an intensifier of the process of flaxseed germination and an effective disinfectant of food raw materials was experimentally proven. It is shown that the use of plasma-chemical activation of process solutions not only accelerates flaxseed germination, but also contributes to a more active accumulation of biologically valuable components in flax raw materials. The composition of flaxseed as a raw material derivative was analyzed. Germinated flaxseed, which is considered a high-value component of food products, was studied separately. An increase in the moisture content of flaxseed during the soaking process by 0.7–1.7 % was recorded. Seedling development increases by 2–9 mm. The germination energy and capacity increase by 5–12 %. The biomass of germinated seeds increases by 39–56 %. In the process of germination, the content of proteins in flaxseed increases from 21.88 to 23.71 %, reducing sugars from 2.37 to 4.02 %. The total content of amino acids increases from 3.64 to 10.38 % compared to the control, and 10 times compared to the raw material. A significant accumulation of vitamins was noted: B1, B2, B3, B5, B6, B7, B9, C, E. In addition, plasma-chemically activated solutions effectively disinfect germinated flaxseed. The technology can be applied in the production of enrichment components of food products. Analysis of the current condition of tourism in national parks shows the need for more effective public administration of environmental tourism and recreation in the two following areas: creating conditions for the development of regulated environmental tourism and recreation; minimizing the negative impact of tourism and recreation on natural complexes and historical and cultural objects. The authors draw attention to the fact that it is essential to understand the role of ecotourism public administration and its social responsibility for nature’s fate. The production of various types of products requires a certain purity and quality of fatty acids. To obtain these compounds, it is promising to use soapstocks, which are waste products of alkaline refining of oils. The peculiarity of the work lies in determining the effect of the process parameters of soapstock decomposition with sulfuric acid on the saponification number, which is an important production characteristic of fatty acids. The study used sunflower soapstock according to DSTU 5033 (CAS 68952-95-4) with a mass fraction of total fat of 69.5 %, fatty acids – 64.5 %. The soapstock was treated with a sulfuric acid solution at a temperature of 90 °C, the process duration was 40 min. Rational parameters of soapstock treatment were determined: concentration of sulfuric acid in the reaction mass is 80 %, concentration of an aqueous solution of sulfuric acid – 50 %. In the experiment interval, the settling duration of the reaction mass does not affect the saponification number of fatty acids. The settling time of 1 hour is effective for the isolation of fatty acids. Under these conditions, the saponification number of fatty acids was 186.4 mg KOH/g. The acids correspond to fatty acids of the first grade according to DSTU 4860 (CAS 61788-66-7): mass fraction of moisture and volatile substances – 1.2 %, mass fraction of total fat – 97.5 %, cleavage depth – 95.0 % oleic acid. The obtained data allow rational and most efficient use of the reagent – sulfuric acid. The results of the work make it possible to reduce the duration of fatty acids obtaining from soapstocks, since the efficiency of the process with the minimum duration of mass settling has been confirmed. The improved technology of soapstock decomposition makes it possible to obtain a valuable product – high-quality fatty acids under rational conditions.
