Abstract
В статті проаналізовано сучасні світові тренди та тенденції м’ясопереробної індустрії; визначено оновні напрями розвитку для української галузі; на базі теоретичних та прикладних досліджень сформульовано вітчизняні принципи створення біотехнологій м’ясних продуктів високої якості, наведено шляхи їх практичної реалізації
