Програмно-цільове управління ризиками готельно-ресторанного бізнесу

Abstract

Предметом дослідження є сукупність теоретико-методичних та прикладних аспектів програмно-цільового управління ризиками готельно-ресторанного бізнесу. Метою статті є удосконалення теоретико-методичних засад та розробка практичних рекомендацій щодо використання програмно-цільового підходу до процесу управління ризиками готельно-ресторанного бізнесу. Для досягнення поставленої мети у роботі застосовано комплекс загальнонаукових і спеціальних методів дослідження. За допомогою методів аналізу та синтезу розкрито основні підходи до процесу управління ризиками підприємства, які відрізняються один від одного сферою застосування, переліком етапів, послідовністю та процедурами їх здійснення. У роботі обґрунтовано доцільність використання програмно-цільового підходу до процесу управління ризиками готельно-ресторанного бізнесу. Запропоновано логічну схему та основні етапи організації і здійснення програмно-цільового управління ризиками готельно-ресторанного бізнесу, що дає змогу виявляти найбільш небезпечні ризики у цій сфері та визначати відповідний інструментарій впливу на них з урахуванням встановлених цілей, наявних та необхідних ресурсів. Результати дослідження можуть бути використані суб’єктами господарювання готельно-ресторанного бізнесу для підвищення ефективності підготовки, прийняття та реалізації управлінських рішень в процесі управління ризиками.The subject of the study is a set of theoretical, methodological and applied aspects of program-targeted risk management of hotel and restaurant business. The purpose of the article is to improve theoretical and methodological principles and to develop practical recommendations for using the program-target approach to the risk management process of hotel and restaurant business. In order to achieve this goal, a complex of general scientific and special research methods was used in the work. Using the methods of analysis and synthesis, the main approaches to the enterprise risk management process are described, which differ in scope of application, the list of stages, sequence and procedures for their implementation. The work substantiates the feasibility of using the program-target approach to the process of managing the risks of hotel and restaurant business. The logical scheme and the main stages of the organization and implementation of the program and target management of the risks of the hotel and restaurant business are proposed, which enables to identify the most dangerous risks in this area and to determine the appropriate tools of influence on them taking into account the established goals, available and necessary resources. The results of the study can be used by business entities of the hotel and restaurant business to increase the effectiveness of the preparation, adoption and implementation of management decisions in the process of risk management.
