Abstract
Здійснено математичне моделювання кінетики ферментативного ацидолізу жирів. Визначено константи швидкостей прямих і зворотних реакцій, а також їх константи рівноваги.
The mathematical kinetic modeling of enzymatic acidolysis of fats was performed. The rate constants of forward and reverse reactions and their equilibrium constants are defined.
