Abstract
В статье сформулирована задача использования класса ферментов – ацилтрансфераз для проведения реакции ферментной гидратации растительных масел с целью создания новой экологически чистой технологии.
In the article for the purpose of creation the new ecologically pure technology the problem of using the class of enzymes – acyltransferases for reaction of enzyme degumming vegetable oils are formulated.
